Any food establishment has food hygiene inspections from the local authority (a bit like Ofsted for schools). These inspections can happen at any time in the year (it's normally once a year) and take place with no pre-warning. They look at things like food storage, cleaning procedures, training records and lots of paperwork. Today, Papilio coffee had its inspection and we're delighted to say got 5 stars.
Even when you know you're doing the right things it's always a bit scary when the inspector is walking around checking everything and asking you questions (particularly as you're still trying to serve customers and prepare food for the day!), but the staff handled it brilliantly and it's a big testament to their year round hard work.
